Chef Danny Lledó’s Workshop Announces Creative Mid-Winter Updates

Washington, DC (January 16, 2025) – Introducing several new dishes shortly after opening, El Taller del Xiquet announced today several new dishes, just weeks after opening. The inspired Spanish workshop restaurant raises the bar for what a renowned, ever-evolving a la carte menu can look like. Chef Danny Lledó unveiled the contemporary space as a place for experimentation, for curious exploration, and the stellar flavors that exemplify his cooking. 

Additions to the focused list of appetizers include Lledó’s take on Salpicón, a succulent medley of chopped razor clams, bay scallops, calamari, and mussels, complemented by pickled vegetables, escabeche and an oyster cream emulsion. Polp is a presentation of octopus and charred eggplant atop squid ink puree, fire-roasted potatoes and olive gel. 

The concept, which has been met with eager anticipation, looks forward with every presentation, continuously adding to and refining inventive dishes. Lledó’s wood fired kitchen, and fresh, innovative ingredients offer guests a multitude of reasons to revisit the space.


Paella De L’Albufera

Those who have already dined may be familiar with the Paella Ibéric - one of chef’s iconic and award-winning hallmarks. This month, he introduces Paella De L’Albufera, a delectable version with duck breast, asparagus and seasonal mushrooms, presented tableside to share. For guests seeking a deliciously unorthodox way to have wagyu, Carn is made with Australian s7 wagyu beef, Spanish omelet foam and espanyol sauce. Also new this month, all dishes can be enhanced with two grams of black perigold truffles from the Castellón province just north of Valencia.
