Embark on a Journey to Oaxaca This Summer with dLeña’s Newest Culinary Collection

Discover the spirit of Mexico with corn-centric menu items from June 18 through July 28

Washington, DC—This summer, embark and discover the spirit of Mexico through corn with a spotlight on Oaxaca at dLeña. The Destination Oaxaca by Chef Richard Sandoval project is more than just a menu collection; it's a study on tradition, craftsmanship, and the profound connection between food and culture. From Tuesday, June 18, through Sunday, July 28, guests are invited to discover the spirit of Mexico through corn and honor the essence of Oaxacan cuisine.

Chef Richard Sandoval's recent exploration of the city and its markets, people, and food sparked an even deeper appreciation for the region’s culinary heritage. This research continued from the streets of Oaxaca into his test kitchen, where he developed a capsule collection of traditional menu items, infusing his own unique perspective, while honoring the essence of Oaxacan cuisine. The result is a delicate balance of tradition and innovation, a homage to the artisans and farmers who have preserved these time-honored recipes for generations.

dLeña’s Destination Oaxaca culinary collection features Pacific Prawns and Guava Mole with guava yellow pipian, citrus purslane, dried chili, chapulines, and corn tortillas, and Crème Brûlée de Calabaza with agave, gooseberry, and flambéed Nixta Licor de Elote Liqueur served with a housemade churro. The collection also includes the Alebrije Paloma with Avion blanco tequila, aperol, grapefruit, lime, agave, and tortilla tatemada, and a zero-proof Tejate d’Guava with guava, coconut milk, corn, vanilla, and cinnamon.

Oaxaca is largely known as the birthplace of corn, which makes it the perfect ingredient to spotlight for the Destination Oaxaca culinary and beverage menus. As a testament to the Oaxacan people, who have mastered the art of transforming simple ingredients into culinary treasures, Chef Richard Sandoval showcases corn in all of its forms from the humble tortilla to the intricate process of nixtamalization.
