Modan To Bring Upscale Japanese Fare To Northern Virginia This Fall

Modan Will Feature An Omakase Bar, Sushi Counter, and Dry-Aging Program

McLean, VA (September, 3, 2024) Modan, (1788 Chain Bridge Road, McLean, VA 22102) is set to launch an extraordinary, contemporary Japanese cuisine concept in Northern Virginia this fall. The chic 7000 sq-ft restaurant will feature a bar, a sushi counter, a private Omakase counter, a private dining space, and an outdoor patio, a part of the newly erected Heming apartment complex.  

Modan, meaning ‘modern’ in Japanese, will provide guests an immersive and entertaining dining experience through its exquisite cuisine and sleek atmosphere. Guests will be treated to a journey of discerning newfound depth in classic Japanese fare and discover new flavor profiles through a luxurious Omakase experience and other modern offerings.


Under the direction of Executive Chef Micheole “Chico” Dator, Modan distinguishes itself with its proprietary in-house dry aging, bringing art on a plate to guests with a flavor profile they have never experienced before. During the dry aging process, enzymes break down the protein and fat structures within the meat while simultaneously drawing out moisture, resulting in a melt-in-your-mouth experience. Modan will apply their own unique dry-aging techniques not only to beef but fish as well offering a curated variety of buttery, dry-aged cuts from both land and sea for guests. 

For Dator, his love for travel has influenced his wide-ranging culinary talents, allowing him to experience diverse cuisines, traditions and new ways of life. Most recently he worked as the Executive Sushi Chef at Nobu DC. Prior to that, he worked in Nobu Kuala Lumpur, Nobu Malibu and Nobu Lanai.

“My cooking style blends traditional and modern Japanese techniques with elements of Southeast Asian cuisine,” said Dator. “Traditional Japanese cuisine emphasizes seasonal ingredients, meticulous preparation, and presentation, while modern Japanese cuisine often incorporates innovative techniques and global influences. Adding a touch of Southeast Asian flair can introduce vibrant flavors and ingredients resulting in a delightful fusion of flavors and culinary traditions.” 

Modan’s award-winning design elements are highlighted through the use of an open concept sushi counter, an expansive dining room, and captivating spaces throughout the restaurant. Visual stimulation is at the heart of Modan's interior decor, naturally encouraging guests to share their aesthetic dining experience with others.

Crafted by CollectiveArchitecture, Modan’s innovative interior was awarded by the IIDA Mid-Atlantic chapter’s 2024 Premiere Design Awards for its creative use of textures, light, and shadow writing, “This harmonious balance of textures evokes a sense of Japanese wabi-sabi, where beauty is found in imperfection.”’
